Santoku means "three uses" or "three virtues" in Japanese, named after its use for preparing meat, fish and vegetables. In Japan a Santoku is just known as a 'knife' as it is the most commonly used shape in most households.
Santokus are an all purpose knife, this one is made from the Stainless Steel Ginsanko, or Silver 3. Of all the stainless steels, this one is probably the easiest to sharpen due to it's lower Chromium content. The Nashiji, or 'pear-skin' finish elevates this knife to a new level, this is a really special piece of kit.
